Crew Chew Recipe: Chicken Gunk Casserole / Mall of America!

When future scheduling called me, I was only good for 2 days. There were lots of 4-day trips available, some 3-days and just a couple of 2-days, so I had to choose a 2-day. Would you believe there was one that got back early enough for me to fly home? Not only that, but the layover was near the Mall of America, and I’ve never been there, so I took it!!

This place was so huge, that there were so many trains, taxis, shuttles, and buses that I thought I was at the airport! Both my beautiful niece and I collect magnets from every city I go, so I had to get her a Minneapolis Mall of America magnet. I picked up a treat for my Daddy from the Peeps store as he loves them. I also picked up a fun little Lego set for my precious nephew!

Because I knew I’d do some shopping, I decided to forego my dinner. During a 2 to 4-day trip, I like to splurge on one good meal, but instead I packed my food. This brings me to talk about my roommate’s famous Chicken Gunk Casserole! Krista Holdrum allowed me to post this, so I’m ready to share with the world! Keep in mind, it’s even better the next day as all the flavors blend together…

Shredded chicken (1 full rotisserie or 4 – 6 thighs, breasts)
1 large blue bag Pepperidge Farm stuffing
1 can chicken broth
2 cans cream of chicken
2 cans cream of celery
1 1/2 cup mayonnaise

Directions:
Mix some chicken broth with 3/4 of the bag of stuffing – just enough to be moist (NOT sticky). In a separate bowl, mix 2 cans cream of chicken, 2 cans cream of celery, and mayo, set aside. In 13 x 9 casserole dish, layer shredded chicken, soup mixture, then stuffing mix (sprinkled, so you can see the soup mixture underneath). Keep layering with stuffing mix on top – about 3 layers. Bake at 350 for 45 minutes.

Let’s take this a step further! You can buy a set of 5 aluminum mini loaf pans for under $2. One casserole dish will fill 8 of these pans. I cover them with heavy duty foil, label, then freeze them. On my trips, they thaw enough for me to bake in the oven! Bon appetit!
